There is a comfort food that my mother use to make us, on weekends mostly, were the main ingredient was tomatoes.
It goes as follows:
Saute Onions, Garlic, Tomatoes, salt & pepper to taste and then you add beaten eggs.
It stays very humid and you spoon it over toasted french bread and enjoy it with a hot cup of coffee.
I never found out were that recipe came from.... I suspect from my grandmother in Portugal. If anyone knows what it is called or were it originated from, please let me know.
